Extremely easy recipe to throw together for a healthy version of a burger!
1 chicken breast
1/2 can black beans
1/4 diced onion (I used a shallot because that's all I had!)
1 tbsp of flower or 1/2 tbsp of corn starch
Salt & pepper
Criole season for some spice (use dried red peppers and seasoning salt for the same taste)
Put all items in a food processor and mix until combined.
Heat olive oil in a hot skillet and place a large spoonful of the mixture into the pan. Flatten like a burger and let brown on both sides until the chicken is cooked.
Serve with sautéed mushrooms, goat cheese, avocado and a spicy aioli.
